Mat Gonzalez cut his teeth manning the pits at LA Barbecue, where he learned the art of the perfect Texas brisket. It was that job that led him to take on a welding apprenticeship, and build his first smoker. Before entering the BBQ universe, Mat bartended at Launderette in Austin, and Gjelina in Venice, California. Mat’s perfect Sunday is an ice cold IPA, Thin Lizzy blasting through his speakers, and a rack of ribs on his plate.
Kelsey Small, a yankee from Connecticut, got to Texas as fast as he could. After a stint in Chicago for college, he moved to Austin to work at the infamous Franklin BBQ, where he learned the true definition of southern hospitality. He went on to man the wood oven at Neapolitan pizza joint Bufalina for 3 years, with stints baking bread at Emmer & Rye and L’Oca D’oro in between. Kelsey’s perfect Sunday is spent sipping margaritas, with some breezy tunes, and a white clam pie, fresh out the oven.
